San Luis Potosí Shined During the SLP Gastronomy Month,presented by Audi de México

The San Luis Potosí Gastronomy Month at the Wine Bar by CMB came to a successful close — a celebration that, throughout June, brought hundreds of visitors closer to the culinary richness of this state, host of the México Selection by CMB San Luis Potosí 2024, presented by Audi de México.
For 30 days, the public enjoyed a unique selection of traditional and contemporary dishes, the result of in-depth research and creative development by chef Daniel Nates. The gastronomic offering was paired with a curated selection of award-winning wines from the Concours Mondial de Bruxelles, along with internationally recognized beers, meads, and spirits.
“The San Luis Potosí Gastronomy Month was a concrete opportunity to showcase the strength and culinary diversity of this state. Thanks to the support of Audi de México and the joint work with the Wine Bar by CMB, we were able to introduce the capital’s audience to the flavors and products that shape the gastronomic identity of this remarkable region,” stated Carlos Borboa, Director for Latin America and North America at the Concours Mondial de Bruxelles.
The menu created by chef Daniel Nates included iconic dishes from San Luis Potosí, such as Nopales with red pipián made from sesame, pumpkin seeds, and cascabel chili, Asado de boda potosino with ancho chili adobo and stewed beans, and a renewed version of the traditional Enchiladas potosinas. For dessert, the chef presented Xoconostle in syrup with double cream cheese ice cream and mint, a tribute to the desert’s ingredients and the region’s mezcal-drinking tradition.

The cycle featured unique ingredients from San Luis Potosí, including cactus fruit cheese (queso de tuna), fresh cheese, and native herbs and spices from the Potosino desert —essentials in all the tastings organized by the San Luis Potosí Secretary of Tourism as part of the México Selection by CMB 2024.
