Daniel Nates, new associate chef at Wine Bar by CMB
The Wine Bar by CMB is happy and excited to officially share the arrival of Daniel Nates Villegas as the new associate chef of the Wine Bar by CMB.
Daniel is a young chef with a strong belief in sustainability in the kitchen, being involved with the producers of the raw material and being close to the process of each ingredient. His main goal is to change people’s minds about eating healthy, using locally produced ingredients. In this way, Daniel continues to consolidate his style based on a blend of the traditional and the contemporary.
The creative depth and growth of his career have been recognized in different international forums. In 2016, he was one of the finalists of S.PELLEGRINO YOUNG CHEF, with his recipe “Quitamal”, where he won the award for “Most Inspiring Message” as his recipe is a reflection on the relationship of human beings and nature, and how the two coexist.
At the end of 2017, he represented Mexico in the gastronomic week held in Nairobi, Kenya, together with traditional cook Juana Bravo; and a year later, he was selected as one of the 12 Chefs who break the mold in the Gourmet de México magazine.
That same year, Daniel returned to the S.Pellegrino Young Chef 2018 platform, becoming a semifinalist with his dish “Humos y Tiznes”, and for 2019, he was selected by Food and Wine en Español magazine as one of the 19 Best New Chefs in Mexico.
“The Wine Bar by CMB will have an evolution… We will continue to offer the accompaniment proposed from the beginning to the award-winning drinks in the various platforms of the Concours Mondial de Bruxelles, with high-level gastronomy in a friendly and relaxed format,” details Carlos Borboa, director of the Wine Bar by CMB.
“However, Daniel will have his own space for development, research and creation, reflected in the new space dedicated to his tasting menu proposal, which can be enjoyed under previous reservation in “Daniel Nates at the Wine Bar by CMB”, a space where the young chef will give free rein to all his creativity, to satisfy his need to communicate gastronomy in his own way, to delight the palates of his visitors and friends in his own style, with a pairing primarily composed of Mexican drinks“.
Finally, the Wine Bar by CMB also announces the birth of an alternate joint project that has its home in its already famous cellar: its name is “ARCU, at the Wine Bar by CMB”.
ARCU will explore the different levels of beverages, their origin, history, the way they nourish the human being and how they create an unforgettable experience around liquids, so that Daniel will exploit all his knowledge and techniques, of course always in a journey of discovery and creativity to accompany the drinks proposed seasonally.
