Guanajuato Gastronomy Month, presented by Audi de México, kicks off at the Wine Bar by CMB in Mexico City

During all August, the Wine Bar by CMB will celebrate Guanajuato Gastronomy Month, presented by Audi de México. The initiative is a continuation of promotional activities within the framework of the CMB Guanajuato • México • 2024
There will be 31 days in which hundreds of visitors will be able to discover the gastronomic richness of Guanajuato, at the Wine Bar by CMB in Mexico City. The culinary intervention of Daniel Nates, associate chef of the Wine Bar by CMB, will be joined by 7 recipes from traditional cooks from various parts of the State of Guanajuato, as well as the proposal of David Quevedo, executive chef of Viñedo San Miguel and Trasiego.
To pair the gastronomic proposal, the Wine Bar by CMB will offer a selection of national and international wines awarded at the Concours Mondial de Bruxelles, in addition to the usual beers, sake and spirits with medals in its different global sessions.
“After a successful Concours Mondial de Bruxelles Guanajuato • México • 2024, we are happy to announce this initiative promoted by the German premium car brand in Mexico and the Wine Bar by CMB, which will allow to spread ingredients, ancient techniques, knowledge and flavors from the State of Guanajuato,” says Carlos Borboa, director for Latin America and North America of the Concours Mondial de Bruxelles and director of the Wine Bar by CMB.
Among the dishes that are part of the gastronomic month are Guilancha, a sphere of blue corn and lard filled with cheese, accompanied by cracked bean sauce thickened with blue corn pinole and scented with epazote, by Consuelo Venancio, traditional cook from Delgado de Abajo Community in Comonfort; Xocopollo, chicken with xoconostle and red chilaca, by María Del Buen Consejo, traditional cook from the municipality of San Felipe; Beef Carnitas Tacos, served on a ceremonial tortilla and accompanied with green chili sauce, garlic and roasted tomato on maguey leaves, by Sara Arvizu, traditional cook from the municipality of San José Iturbide, and the legendary Plato de Fiesta, served with mole poblano and ceremonial tortilla, by Gloria Vázquez, traditional cook from Del Llanito Community, in Dolores Hidalgo, Guanajuato.
For the master dinners, reserved for reserved for special guests of the four rings brand, chef David Quevedo will participate with a Sope de escamol with citrus mole, quince tie, strawberry and honey air, as well as his iconic Confit suckling pig with mesquite honey and salad with orange vinaigrette. In addition to CMB awarded wines from France and Portugal, the experiences will include special pairings by Viñedo San Miguel.
The gastronomic cycle would not be complete without the presence of 4 traditional cooks from the State of Guanajuato, who will take the kitchen of the Wine Bar by CMB to offer their recipes to the public on August 2nd, 17th, 22nd and 30th, thanks to the coordination of the Ministry of Tourism of the State of Guanajuato.
